
Rhubarb Pie with Chocolate

This is perfect if you have some wheat dough left over and want to make something other than buns. Use whatever fruit or berries you have at home to make this delicious pie! Here’s a nice tip: for example, bake an almond butter cake and make one sheet pan of butter cake and one pie as described below.
Here's how:

Roll out the wheat dough and line a pie pan with it.

Mix the rhubarb with the potato starch.

Cut the almond paste into cubes and mix it into the rhubarb; spoon the mixture into the pan on top of the wheat dough. Let it rise for about 20 minutes.

Preheat the oven to 220 °C.

Sprinkle with slivered almonds and bake the pie for about 20 minutes.

Shred the white chocolate using a grater or a potato peeler. Sprinkle it over the pie while it's still slightly warm.

Sprinkle a little powdered sugar on top.

Enjoy it with ice cream, whipped cream, vanilla sauce, or just as is!

- ½ batch of wheat dough (see recipe; note: the recipe is for a full batch)
- 4 dl rhubarb, cut into pieces
- 12 g (about 1 tbsp) potato flour
- 250 g Odense Premium Almond Paste
- 1 dl sliced almonds
Garnish
- 50 g Odense white chocolate
- powdered sugar
- optional: ice cream, whipped cream, or vanilla sauce, for serving
