
Cinnamon Buns

With cinnamon as the base, adding a little cardamom makes them extra flavorful. If you’d rather bake them as a loaf, that works just as well, of course. There’s not much that beats the smell of freshly baked buns!
Here's how:

Pour most of the flour, along with the sugar, salt, and cardamom, into the food processor bowl. Add the margarine in small pieces and crumble in the yeast.

Heat the milk to 25 °C. Pour the milk over the ingredients in the bowl and knead vigorously until the dough is shiny and smooth and pulls away from the sides of the bowl, about 5 minutes.

Let the dough rise under a kitchen towel in the bowl until it doubles in size, about 30 minutes. When it has finished rising, it will have a dry, shiny surface. Then knead it a few times in the mixer.

Divide the dough into two pieces. Roll out the pieces into rectangles measuring about 40×30 cm. Spread the filling thinly over the dough, fold in half, and cut into 2-cm-wide strips. Stretch and twist the strips of dough, then shape them into loose knots.

Place the dough balls on baking sheets lined with parchment paper. Let them rise for 45 minutes.

Brush the buns with egg and sprinkle with pearl sugar. Bake in the middle of the oven for about 8–10 minutes, until golden brown.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 500 g (5 dl) milk
- 900 g (about 15 dl) all-purpose flour
- 150 g (about 1.5 dl) butter, at room temperature
- 6 g (about 1 tsp) salt
- 100 g (about 1 dl) granulated sugar
- 5 g (about 1.5 tsp) ground cardamom

- 150 g (about 1.5 dl) butter, at room temperature
- 100 g (about 1 dl) granulated sugar
- 6 g (about 1 tbsp) ground cinnamon
Brushing
- 50 g (about 1) egg, beaten
