
Greek sourdough bread

An easy-to-bake, moist, and delicious bread with a hint of cumin. If you don't want cumin in it, just leave it out and season it with whatever you prefer. This recipe makes 2 large loaves.
Here's how:

Day 1
Mix together the yeast, sourdough starter, and water. Add the remaining ingredients to the pre-dough. Mix into a dough and let it rest in the refrigerator overnight, covered with plastic wrap.

Day 2
Add the remaining ingredients. Knead until the dough is elastic and smooth, about 10 minutes in a mixer. Double that time if you’re kneading by hand. The dough should be loose, but not sticky.

Shape the dough into an even, smooth ball. Let it rise until doubled in size in a bowl covered with a kitchen towel or plastic wrap for at least 1 hour.

Turn the dough out onto the table, handling it as little as possible. Divide the dough into 2 pieces (loaves) or 4 pieces (baguettes) and gently roll them out to the desired length.

Place on a baking sheet and cover. Let rise for about 1 hour. Preheat the oven to 260 °C.

Brush the bread with water and sprinkle a little flour on top; score the bread with a sharp knife.

Place the loaves in the oven and lower the temperature to 220 °C. Bake for about 20–25 minutes. Let cool on a wire rack.

Day 1
- 12.5 g (1/4 packet) KronJäst for Bread, fresh
- 150 g (1 bag) KronJäst Rye Sourdough
- 500 g (5 dl) water, cold
- 340 g (about 6 dl) all-purpose wheat flour
- 200 g (about 3 dl) rye flour
- 100 g (about 1.6 dl) graham flour
Day 2
- 12.5 g (1/4 packet) KronJäst for Bread, fresh
- 300 g (about 5 dl) all-purpose flour
- 20 g (1 tbsp) olive oil or canola oil
- 15 g (2.5 tsp) salt or sea salt
- 4 g (2 tsp) ground cumin
