
Spelt Loaf with Chia Seeds

Bread baked with spelt flour results in a tasty and hearty loaf. This recipe also includes chia seeds, rolled oats, and other nutrient-rich grains. Plus, it’s a delicious semi-coarse bread that you can bake without a bread machine, since the dough doesn’t need to be kneaded. All you need is a bowl to mix the dough in and two loaf pans.

Dissolve the yeast in lukewarm water. Add the remaining ingredients and stir with a spoon. The dough should be fairly loose. Cover the mixing bowl with plastic wrap and let it rise for about 30–45 minutes.

Divide the dough between two greased loaf pans and let it rise for another 45 minutes. Preheat the oven to 225 °C, using standard top and bottom heat.

Place the pans on the lower rack of the oven and bake the loaves for about 40–45 minutes. Remove the loaves from the pans and bake them for another 20 minutes or so on a cooling rack. Be careful—it’s very hot. Let the loaves cool on the cooling rack after baking.

- 50 g (1 packet) KronJäst for Bread, fresh
- 950 g (9.5 dl) water, lukewarm
- 650 g (about 10.8 dl) spelt flour, sifted
- 250 g (about 4.2 dl) whole-grain spelt flour
- 60 g (1 dl) pumpkin seeds; set aside a few for garnish
- 60 g (1 dl) sunflower seeds; set aside a few for garnish
- 50 g (0.8 dl) chia seeds; set aside a little for garnish
- 50 g (1.5 dl) rolled oats, lightly toasted
- 6 g (about 1 tsp) salt
