
Chocolate & Raisin Bun

A bun that isn't too sweet but tastes absolutely amazing. Marie got the recipe when she took a course in Viennoiserie at Solhaga Stenugnsbageri in Slöinge—which, by the way, is a fantastic bakery that's not to be missed!
Here's how:

Soak the raisins in cold water for about 1 hour.

Mix all the ingredients except the butter, chocolate, and raisins for about 8 minutes on low to medium speed (double the time if kneading by hand)

Add the butter in cubes and increase the speed slightly; continue mixing for about 4 more minutes.

Add the chocolate and the drained raisins.

Let it rise for 1 hour, preferably in an oiled baking pan.

Divide the dough into 16 pieces, roll them into balls, make a hole in the center, and top each with a small round ball! Place them in the molds.

Let it rise for about 1½–2 hours.

Preheat the oven to 220 °C. Brush with the egg and sprinkle with pearl sugar. Bake for about 8–10 minutes. Let cool on a wire rack.

- 25 g (1/2 packet) KronJäst for Sweet Doughs
- 500 g (about 5 dl) milk
- 1 egg
- 30 g (about 2 tbsp) granulated sugar
- 10 g (about 1 1/2 tsp) salt
- 100 g butter, soft but cold
- 75 g dark chocolate, chopped, or chocolate chips
- 75 g raisins
- 1,100 g (about 18 dl) special-purpose wheat flour
