    Chermoula is a North African dressing that goes very well with, for example, a salad on a hot summer day! Serve it with some delicious sourdough bread. Prepare the dough in the evening, let it rise in the refrigerator overnight, then take it out and bake it in the morning. That way, you can enjoy the beautiful weather all day long.

    Here's how:

      Blend the almond paste, grated garlic, and spices, then add lemon juice and water until the mixture reaches the right consistency. It should have the consistency of yogurt.

      Season the sauce with salt and pepper.

      Toast the seeds in a skillet.

      Slice the red onion into rings and the carrot into rounds, and mix them with the salad.

      Add the croutons, drizzle the dressing over the salad, and toss gently just before serving.

      Serve with freshly baked sourdough bread.

    Dressing

    • 100 g almond paste
    • 29 g (about 3 tbsp) olive oil
    • 3 g (about 1 tsp) ground cumin
    • 3 g (about 1 tsp) ground coriander
    • 1 g (about 1/4 tsp) chili powder
    • 1 clove of garlic
    • 30 g (about 2 tbsp) lemon juice
    • 60 g (about 4 tablespoons) water

    Salad

    • 3 tbsp seeds (your choice, such as sunflower or pumpkin seeds)
    • 1 red onion
    • 1 carrot, peeled
    • 1 bag of mixed salad greens
    • salt and pepper
    • vinegar/lemon juice
    • croutons, freshly toasted
