    Blinis (Russian pancakes) are perfect as a tasty evening snack, an appetizer, or on a buffet table. Unlike Swedish pancakes and plättar, blinis contain yeast and buckwheat flour. This gives the “pancakes” a slightly tangy aroma and flavor, which pairs perfectly with both savory toppings, such as salmon, herring, sprat roe, or bleak roe, as well as sweet toppings, such as whipped cream and jam.

    Here's how:

      Crumble the yeast into a bowl. Warm the milk until it is lukewarm, about 37°. Pour a little of the warm milk over the yeast and stir until it dissolves.

      Mix in both types of flour, the egg yolks, the salt, and the rest of the milk.
      Stir until the batter is smooth.

      Cover the bowl and let the batter rise for about 1 hour at room temperature.

      Then stir in the sour cream.

      Beat the egg whites until stiff peaks form, then gently fold the meringue into the batter.

      Heat a pancake pan or blini pan with a little butter. Spoon the batter into the pan, about 2 tablespoons per blini. Flip them when they have risen and set on top. Serve the blinis fresh from the pan with the toppings either on top or in small bowls on the side.

    Suggested Serving Ideas

    Smetana (sour cream mixed with a little lemon juice, salt, and pepper), red onion, black or red lumpfish roe.

    Shredded smoked salmon, crème fraîche, grated horseradish, and roe from small whitefish

    Anchovy fillets or matjes herring, chopped hard-boiled egg, a little melted butter, and chives

    Chopped hard-boiled egg with shredded gravlax and maître d' sauce, topped with a dollop of crème fraîche

    Sour cream mixed with smoked caviar, dill, and chopped hard-boiled egg.

    • 500 g (about 5 dl) milk
    • 120 g (about 2 dl) buckwheat flour
    • 120 g (about 2 dl) all-purpose flour
    • 2 egg yolks
    • 6 g (1 tsp) salt
    • 45 g (about 3 tbsp) sour cream
    • 2 egg whites
