
Gluten-Free Apple Bread

A gluten-free loaf of bread baked in a loaf pan. Delicious flavor of apple and sunflower seeds!
Here's how:

Crumble the yeast into a bowl, pour in water (about 25 °C), and stir until the yeast dissolves. Add sugar, salt, oat flour, and half of the oat flour mix.

Cream the butter, then add the chopped apples and the rest of the flour mixture, a little at a time. Knead the dough thoroughly, but be careful not to let it get too firm. It should still be loose and sticky.

Let it rise under a kitchen towel for about 30 minutes. Grease a loaf pan (about 1.5 liters) with room-temperature butter. Sprinkle a little flour mix and, if desired, sunflower seeds into the pan.

Press the dough into the pan. Arrange the apple slices on top and sprinkle with sunflower seeds. Let rise for about 30 minutes, covered with a kitchen towel. Preheat the oven to 200 °C.

Bake in the middle of the oven for 20–25 minutes. Reduce the heat to 175 °C and bake for another 10 minutes or so.

Remove the loaf from the pan and let it cool slightly before turning it out onto a cooling rack.

- 25 g (1/2 packet) KronJäst for bread, fresh
- 300 g (3 dl) water
- 15 g (1 tbsp) granulated sugar
- 9 g (1.5 tsp) salt
- 55 g (about 1 dl) gluten-free oat flour
- 220 g (about 4 dl) gluten-free oat flour mix + a little extra for the pan
- 25 g (0.25 dl) butter, at room temperature
- 1/2 apple, cored, coarsely chopped
Topping
- 18 g (2 tbsp) sunflower seeds
- ½ apple, thinly sliced
