
Anise Buns

Anise, with its licorice flavor, can be a completely new taste experience in baking for many people. These buns taste especially good with butter, a good cheese, or a delicious marmalade.
Here's how:

Dissolve the yeast in the water. Add the remaining ingredients and knead the dough with a dough hook on medium speed for about 10 minutes, until the dough is smooth and elastic. Double that time if you’re kneading the dough by hand. Cover the bowl with plastic wrap and let the dough rise for about 30 minutes.

Roll out the dough and divide it into 20 equal pieces. Roll the pieces into “sausages” and shape them into small buns. Place all the knots on a baking sheet lined with parchment paper and let them rise, covered, for about 60–90 minutes or until they have doubled in size. Brush with beaten egg and sprinkle with anise seeds. Preheat the oven to 200 °C.

Bake the buns in the oven for about 10–15 minutes, then let them cool on a wire rack.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 1,000 g (about 16.7 dl) all-purpose flour
- 180 g (about 2.1 dl) granulated sugar
- 6 g (about 1 tsp) salt
- 12 g (about 2 tsp) cardamom, ground
- 180 g butter or margarine, at room temperature
- 500 g (about 5 dl) milk or water, cold

- 1 egg, beaten
- 7 g (about 2 tsp) anise seeds
