    This moist wheat bun with cardamom and raisins, topped with pearl sugar, is a real gem. Easy to make and absolutely delicious!

    These buns freeze well, and you can make fantastic croutons by cutting them into pieces and drying them in the oven.

    Here's how:

      Dissolve the yeast in the dough liquid and mix in all the ingredients except the raisins, mixing slowly for 3 minutes, then increase the speed and mix for 10 minutes. Double the time if you’re kneading by hand.

      Pick up the dough and check if it's elastic; if it tears, knead it for a little while longer.

      Pour in the raisins and mix slowly for 30 seconds.

      Place the dough on a lightly floured work surface, shape it into a round, and let it rest for 20 minutes, covered with plastic wrap or a kitchen towel.

      Divide the dough into about 30 pieces, shape them into rounds, brush each bun with water, and press them into pearl sugar (it’s okay if the buns flatten out). Place the buns on a baking sheet lined with parchment paper.

      Let the buns rise in your turned-off oven with only the light on for about 60–90 minutes.

      Take the buns out of the refrigerator and let them come to room temperature, then preheat the oven to 225 °C.

      Bake the buns for about 10 minutes or until they are a nice golden brown.

    • 50 g (1 packet) KronJäst for Sweet Doughs, fresh
    • 500 g (5 dl) milk, lukewarm
    • 1,000 g (about 16.7 dl) all-purpose flour
    • 200 g butter, at room temperature 
    • 180 g (2 dl) granulated sugar
    • 9 g (1.5 tsp) salt
    • 10 g (1 tbsp) cardamom, coarsely ground
    • 300 g (5 dl) raisins
