Super-delicious rye rolls with a rounded sweetness from the juicy raisins, which you can swap out for nuts, cranberries, or figs if you prefer. Serve them with ham for the perfect balance of sweet and savory.
Here's how:

Dissolve the yeast in the water. Mix all the ingredients except the raisins and knead by hand for 15 minutes, or in a mixer for 2 minutes on low speed and 5 minutes on high speed. Stir in the raisins last.

Let the dough rest for 30 minutes under plastic wrap or a baking cloth. Transfer it to a floured surface, divide the dough into 25 pieces, and shape them into rounds. Let the buns rise on a baking sheet in a turned-off oven with only the light on for 50 minutes, or at room temperature under a baking cloth for 90–120 minutes.

Remove the bread from the oven and preheat the oven to 250 °C; let the bread sit at room temperature while the oven heats up. Lower the oven temperature to 210 °C when you place the baking sheet inside. Bake in the middle of the oven for 8–10 minutes.

- 9 g (about 1.5 tsp) salt
