    Pumpkin Doughnuts with Cardamom

    Here's how:

      Cut the pumpkin into pieces and roast it in the oven at 160 ºC for 40 minutes. It should be soft when you pierce it with a fork. Let it cool, then blend until smooth.

      Warm the milk. It should be at room temperature. Pour it into a large bowl if you’re mixing by hand; otherwise, use a stand mixer. Sprinkle in the yeast and add the sugar, brown sugar, and vanilla sugar. Next, add the flour, cardamom, and pumpkin.

      Knead until the dough is fluffy. Let it rise for 30 minutes under a kitchen towel.

      Roll out the dough on a lightly floured surface. Cut the dough into small rounds, then cut a hole in the center of each one. This will form a ring. Place the rings on a baking sheet lined with parchment paper and let them rise for 20 minutes. Then bake the rings in a 225 °C convection oven for about 10–12 minutes. Let them cool slightly.

      Melt the butter, brush each ring, and sprinkle with sugar.

    • 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
    • 2 dl roasted pumpkin, mashed
    • 540–600 g (about 9–10 dl) all-purpose flour
    • 150 g (1.5 dl) milk
    • 50 g (0.5 dl) butter, melted
    • 150 g (1.5 dl) granulated sugar
    • 80 g (1 dl) light brown sugar
    • 5 g (1 tsp) vanilla sugar
    • 3 g (1 tsp) cardamom, freshly ground
    • 1 tablespoon dark rum
    • 1 egg
    • 2 egg yolks

    Garnish

    • 100 g (1 dl) sugar
    • 60 g (4 tbsp) butter, melted
