These mini doughnuts are incredibly delicious, but be careful when frying them! Make sure the oil doesn't get too hot, and always have a lid on hand.

    Here's how:

    • 1

Bring the cream to a boil along with the hazelnut cream or chopped hazelnuts.

    • 2

Chop the chocolate. Pour the nut cream over the chocolate and whisk until smooth. Let cool.

    • 3

Dissolve the yeast in lukewarm milk in a mixing bowl.

    • 4

Mix the milk, flour, egg, butter, sugar, and salt into the mixing bowl. Knead the dough for 8 minutes in a stand mixer. The dough should be chewy and elastic.

Divide the dough into smaller pieces, about 15–20. Roll them into balls. Let them rise at normal room temperature for about 60 minutes.

    • 6

Heat the frying oil to 180 °C. Fry the balls until golden brown, about 2–3 minutes on each side. Remove with a slotted spoon and let them drain on paper towels.

    • 7

Roll the balls in the spiced sugar and let them cool.

    • 8

Then pipe the chocolate and nut cream into the doughnut by gently pressing the tip of the piping bag into the center of the doughnut to make a hole. Serve!
