
Here's how:

Dissolve the yeast in lukewarm water and stir in the dry ingredients.

Mix in a dough mixer for 2 minutes on low speed and 4 minutes on medium speed, or for 15 minutes by hand, until the dough is smooth.

Cover the bowl with plastic wrap and let it rise for about 60 minutes.

Preheat the oven to 230 °C.

Roll out the dough thinly, to about 1.5 mm.

Prick the dough “thoroughly” with a skewer and cut it into the desired size.

Brush with water and sprinkle with various seeds and flaked salt before baking.

Place on a baking sheet lined with parchment paper and bake in the center of the oven for about 10–12 minutes.

Let it cool on a wire rack.
