
Gluten-Free Christmas Bread

At Christmas and other holidays, I think it’s especially important that no one feels left out. If you have celiac disease and everyone else is enjoying delicious Christmas bread, you might feel left out. Spiced Christmas bread with butter and cheese is absolutely delicious, both for breakfast and for Christmas lunch. This bread is so wonderfully soft that everyone will want to eat it. You can adjust the seasoning to your own taste.
Here's how:

Weigh the water in a bowl and stir in the yeast. Then weigh all the other ingredients—pour them straight from the package and reset the scale between each ingredient to save on dishes.

Mix the ingredients by hand using a spoon, spatula, or whisk. You can use a stand mixer or food processor, but it’s not necessary. The important thing is that everything is mixed thoroughly. Make sure there’s no dry, unmixed flour left. At this stage, the dough should be fairly loose.

Cover the bowl with plastic wrap and let the dough rest at room temperature for 8–10 hours.

Take out a baking sheet and line it with parchment paper. Preheat the oven to 250 °C (convection 230 °C).

Wet your hands with water and shape the entire dough into an oblong loaf. The dough is very pliable and doesn't stick. Place the loaf on the baking sheet.

Bake the loaf in the middle of the oven for 40 minutes. Let it cool slightly before slicing it.

- 12.5 g (1/4 packet) KronJäst for Bread, fresh
- 350 g (3.5 dl) cold water
- 200 g (about 3.6 dl) teff flour
- 100 g (about 1.2 dl) potato flour
- 20 g (2 tbsp) psyllium husk
- 6 g (1 tsp) salt
- 50 g (2 tbsp) dark syrup
- 3.5 g (1 tsp) bread spices
- 2 g (1 tsp) ground bitter orange
- 1 g (0.5 tsp) ground cloves
