    A great recipe for flaky croissants. These delicious pastries may seem a bit time-consuming to make, but feel free to bake them a day in advance and store them in the freezer after step 5. Then all you have to do is take them out, let them thaw, let them rise, and bake them on the day you’re in the mood for some delicious croissants. If you want to make the day a little extra special, you can melt some chocolate and brush it over the croissants. Delicious!

    Here's how:

      Dissolve the yeast in water at 25 °C. Add the eggs, salt, sugar, and almost all of the flour, and knead into a smooth dough.

      Roll out the unproofed dough into a 30×30 cm rectangle. Slice the butter into thin slices and spread them evenly over half of the dough. Fold the other half over.

      Roll out the dough again into a 30×30 cm rectangle. Lightly flour the surface if necessary, and continue folding and rolling a total of about 5 times. It is this process that gives the croissants their delicate layers and makes them so light and flaky.

      Finally, roll out the dough to the size of the pan, about 30×30 cm. First cut it into eight squares, then into 16 triangles; roll up each triangle and fold
      the ends inward so they form a half-moon shape. Place them on a baking sheet lined with parchment paper and let them rise for about 40 minutes under a baking cloth.

      Brush with beaten egg. Bake at 200 °C for about 18–22 minutes in the center of the oven. Serve plain or with jam and good cheeses—a true classic!

    • 50 g (1 packet) KronJäst for Bread, fresh
    • 250 g (2.5 dl) water
    • 50 g (1) egg
    • 6 g (about 1 tsp) salt
    • 15 g (about 1 tbsp) granulated sugar
    • 420–480 g (about 7–8 dl) all-purpose flour
    • 150 g butter, cold 

     

    Brushing

    • 1 egg, beaten 

    Garnish

    • e.g., jam, cheese, or melted chocolate
