    Fall is apple season! Make your own applesauce and use it to flavor buns and pastries. The delicious applesauce gives them a wonderfully caramel-like and juicy flavor. Want to enjoy fresh-baked goods a little more often? Make a double batch while you’re at it and freeze the buns before the second rise. Then all you have to do is take them out, let them thaw, and pick up where you left off when someone at home is craving something fresh out of the oven.

    Here's how:

      Dissolve the yeast in milk at 20 °C. Add the remaining ingredients and knead into a smooth dough for about 10–12 minutes. Double the time if you’re kneading by hand.

      Let the dough rise under a kitchen towel for about 30 minutes.

      Divide the dough into two pieces. Roll out one half of the dough on a floured work surface.

      Spread butter on the dough. Sprinkle with sugar, cardamom, and applesauce.

      Fold the dough into thirds. Roll it out a little more so that it’s about 12 cm wide. Cut it into 2–3 cm wide strips or pieces.

      Twist each strand and shape it into a spiral. Place them in molds on a baking sheet. Do the same with the other half of the dough. Let the buns rise for about 30 minutes. Meanwhile, preheat the oven to 230 °C.

      Brush with egg beaten with a little water. Sprinkle with cardamom and/or sugar. Bake for 8–10 minutes.

    Ingredients

    • 50 g (1 packet) KronJäst for Sweet Doughs, fresh
    • 500 g (5 dl) milk
    • 100 g (1 dl) butter, at room temperature
    • 3 g (0.5 tsp) salt
    • 110 g (1.25 dl) granulated sugar
    • 840 g (about 14 dl) all-purpose flour

    Filling

    • 125 g (1.25 dl) butter
    • 50 g (0.5 dl) granulated sugar
    • 6 g (2 tsp) cardamom, coarsely ground
    • 200 g (2 dl) good-quality applesauce

    Brushing

    • 1 egg, beaten

    Garnish

    • cardamom and/or granulated sugar
