    Here's how:

      Day 1

      Stir/mix all the ingredients for the pre-dough into a batter in a bowl. Cover with plastic wrap and refrigerate for about 11 hours.

      Day 2

      Take out the bowl and let it sit at room temperature for about 1 hour. Mix the remaining ingredients, except for the salt, for 1 minute in a stand mixer. Let it rest for 30 minutes.

      Feel free to wait before adding all the flour so that, during the first resting period, the flour can absorb the moisture from the pre-dough and the milk.

      Then mix on low speed for about 8–10 minutes. Add the salt and mix on a higher speed for 5 minutes.

      The dough should be shiny and soft, not too stiff or hard. Let it rise for 60–90 minutes.

      Scrape the dough together with the dough scraper. It might be a little sticky, but that's how it's supposed to be. Divide the dough in half, and then divide each half into 6 pieces.

      Do not knead the dough at all; instead, be gentle, take each piece, and carefully stretch it into tea cookies, then place them on parchment paper. Let them rise under a kitchen towel for about 60–90 minutes.

      Spray the bread with water and sprinkle sesame seeds on top just before baking.

      Bake in the center of the oven at 250 °C until the bread reaches an internal temperature of 98 °C or has a nice color. About 10–13 minutes. (Feel free to use a baking stone for even better results.)

    The result is wonderfully delicious bread that’s slightly chewy and soft, with a pleasant nutty flavor from the canola oil and sesame seeds.

    • 25 g (about 1/2 packet) Kronjäst for bread, fresh
    • 200 g (about 2 dl) milk, lukewarm
    • 100 g (about 2) eggs
    • 480–600 g (about 8–10 dl) all-purpose flour
    • 26 g (about 2 tablespoons) canola oil
    • 40 g (about 2 tbsp) syrup
    • 20 g (about 1 tbsp) sea salt
