    Here's how:

      Dissolve the yeast in water at about 25 °C. Add the remaining ingredients and mix everything together—about 2 minutes on low speed and 3 minutes on high speed. Double the time if you’re kneading by hand.

      Let the dough rest in the bowl for about 40 minutes, covered with a cloth or plastic wrap.

      Turn the dough out onto a floured work surface, handle it gently, and shape and roll it into a rectangle about 1 cm thick.

      Cut out the desired size, about 7×13 cm

      Place the loaves on a baking sheet lined with parchment paper and let them rise under a kitchen towel or plastic wrap for about 60 minutes.

      Preheat the oven to 250 °C. Place the bread in the oven and lower the temperature to 230 °C; bake for about 15 minutes on the bottom rack.

    • 50 g (1 packet) KronJäst for Bread, fresh
    • 400 g (about 6.5 dl) coarse rye flour
    • 200 g (about 3.5 dl) all-purpose flour
    • 500 g (5 dl) water
    • 12 g (2 tsp) salt
    • 10 g (1.5 tbsp) ground anise
    • 10 g (1.5 tbsp) fennel, ground
