
Pesto Baguettes

Delicious baguettes that can be customized to suit your taste and the occasion. Find your favorite topping and experiment. Divide the dough into smaller baguette portions and sprinkle a little extra cheese on top before baking—you’ll have the perfect snack or picnic bread.
Here's how:

Dissolve the yeast in the water and the sourdough starter.

Mix all the ingredients together, except for the pesto and salt.

Knead the dough for 10 minutes, add salt, and knead for another 5 minutes. Double the time if you're kneading by hand. The dough should be elastic and chewy.

Let the dough rest for 1 hour.

Divide the dough into 4 portions and shape them into long baguettes with pointed ends.

Fold the parchment paper into pockets to form channels, and let the bread rise. Make a slit along the entire length of the baguette, fill the slit with pesto, and sprinkle with sesame seeds and sea salt. Let the bread rise for another 30–40 minutes.

Preheat the oven to 250 °C, preferably with a baking stone or a baking sheet.

Place the loaves in the oven, then after a couple of minutes, lower the temperature to 230 °C.

Bake for about 15–20 minutes.

- 25 g (1/2 packet) KronJäst for Bread, fresh
- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
- 500 g (about 5 dl) cold water
- 250 g (about 4 dl) graham flour
- 3 tablespoons mixed fresh herbs
- 450 g (about 9 dl) all-purpose flour
- 20 g (about 1 tbsp) sea salt
- 1 dl pesto with Parmesan
