Baguettes with oat flakes and honey.
This is a recipe from one of our readers and was not created or tested by KronJäst.
Here's how:
-
1
Crumble the yeast into a bowl and sprinkle salt over it. Drizzle honey over it. Pour in a little water at 20 °C and stir until the yeast dissolves. Pour in the remaining water.
-
2
Add the oat bran and wheat flour. Quickly mix together into a dough using a wooden fork. Sprinkle 1–2 tbsp of wheat flour over the dough and let it rest, covered with a kitchen towel, for about 1–2 hours.
-
3
Preheat the oven to 260 °C.
-
4
Line a baking sheet with parchment paper. Turn the proofed dough out onto a floured work surface. Do not knead, as this will destroy the air bubbles. Quickly and easily divide the dough into four equal parts using a dough scraper. Shape the dough pieces into baguettes the same length as the baking sheet. Lightly dust the shaped loaves with flour and twist them into spirals as you transfer them to the baking sheet. I like to sprinkle a little flaky salt on top, along with nuts or pumpkin seeds.
-
5
Bake directly in the center of the oven for about 15 minutes.
-
6
Reduce the heat to 150 °C and bake for another 12–15 minutes. Be careful not to let the seeds burn; if they start to burn, place a sheet of parchment paper over the baguettes in the oven.
