Whole-grain baguettes made with rye flour have a slightly heartier and healthier feel.

Here's how:

Crumble the yeast into a bowl. Pour in water (20 °C), butter, and canola oil. Stir until the yeast is completely dissolved. Add salt and flour, and knead well. Let the dough rise for about 30 minutes, covered with a kitchen towel.

Turn the dough out onto a floured work surface and divide it into three pieces. Shape the three pieces of dough into three baguettes and score them with a sharp knife. Let them rise for 30 minutes.

Brush the bread with water before baking, then bake the baguettes at 250 °C for 15 minutes. Spray the baguettes with water a couple of times while they’re baking to get a crispy crust.

- 25 g (1/2 packet) KronJäst for Bread, fresh
- 300 g (3 dl) water
- 50 g (0.5 dl) butter & canola oil
- 6 g (1 tsp) salt
- 60 g (about 1 dl) rye flour
- 420 g (about 7 dl) all-purpose flour
