
Wheat Crackers

My own recipe for crispy, golden wheat crackers.

Here's how:

Melt the butter and let it cool. Crumble the yeast into a bowl, add water at 20 °C, and stir.

Add salt, syrup, powdered milk, and finally all-purpose flour. Stir until the mixture forms a firm, sticky dough.

Let it rise under a kitchen towel for 30 minutes. Then shape the dough into small, oblong rolls—or round ones, if you prefer. Let them rise for 20 minutes.

Bake in an oven at 210 °C until they’re golden brown. Take them out, and in the meantime, put the other baking sheet in the oven, because it takes time to split the crusts—you do this by using a fork to prick the sides until they separate into two halves.

Then just switch out the baking sheet and pop them in the oven—but this time at 150 °C—until they’re golden brown and deliciously crispy. Then just turn off the heat and leave them in the oven.

- 330 g (3.3 dl) water
- 160 g (1.2 dl) white syrup
- 100 g (1 dl) butter
- 3 g (0.5 tsp) salt
- 35 g (0.5 dl) powdered milk
- 750 g (about 12.5 dl) all-purpose flour
