
Sunshine Buns

Sunshine buns, or "solbullar," have vanilla cream in the center. Here, we've made them in a spiral shape, but of course you can make them as round buns if you prefer.
Here's how:

Dissolve the yeast in the milk, which should be about 20 °C. Place all the dry ingredients in a bread machine along with the room-temperature butter and the dissolved yeast. Knead the dough in the machine for about 10 minutes on medium speed. Double that time if you’re kneading the dough by hand. Cover the dough and let it rise for about 30 minutes.

Divide the dough into 50-gram pieces and roll them into balls; place them directly on a baking sheet lined with parchment paper. Let them rise for about 40 minutes in a turned-off oven with only the light on.

Remove the baking sheet and preheat the oven to 200 °C.

Gently press your thumb into the center of the fully risen bun. Then pipe the vanilla cream in a round circle.

Bake the sunshine buns at 200 °C for about 7–9 minutes. Let them cool.

Brush the sunshine buns with melted butter, then roll them in granulated sugar. Serve and enjoy!

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 500 g (5 dl) milk
- 1,000 g (about 16.7 dl) all-purpose flour
- 150 g (1.7 dl) granulated sugar
- 6 g (2 tsp) ground cardamom
- 150 g butter, cut into cubes, at room temperature
- 15 g (2.5 tsp) salt
Filling
- 100 g (1 bag) vanilla cream for 1 batch of buns, store-bought or homemade
- 400 g (4 dl) milk
Brushing
- 50 g butter, melted
- 100 g granulated sugar
