Spelt buns with olive oil, syrup, and sea salt.

Mix the yeast with the water (20 °C). First add the olive oil, salt, and syrup, then add the flour a little at a time.

The dough should be sticky because spelt absorbs liquid. Let the dough rise under a kitchen towel for 40 minutes.

Place the dough on a floured work surface and knead it until smooth. Roll the dough into a log and divide it into about 15 pieces, which you then shape into buns.

Then place the molds on a floured baking sheet and let them rise under a baking cloth for another 20 minutes.

Brush the buns with egg. Bake in the oven at 200 °C for about 20–25 minutes. Tap the bottom of the buns—if they sound hollow, they’re done! Let them cool on a wire rack.

- 45 g (0.5 dl) olive oil
- 40 g (3 tbsp) sea salt
- 40 g (2 tbsp) syrup
- 900 g (about 15 dl) spelt flour, sifted
