
Salmon Sandwich with Orange and Fennel Slaw

The sandwich on the left in the picture. Smoked salmon is perfect for any occasion. The fennel slaw, with its fresh, licorice-like flavor, and the corn pair wonderfully with the salty salmon.
Here's how:

Orange and Fennel Slaw
Cut off the root and the green parts of the fennel. Slice it thinly using a mandoline or cut it into paper-thin slices with a knife. Feel free to save the fennel fronds for garnish.

Place the fennel pieces in a colander and pour boiling water over them. If the fennel is thick, you can boil it for a couple of minutes. Then pour it into the colander and rinse under cold water. Let it drain. Pat the pieces dry so they don’t contain any water, otherwise the filling will become soggy.

Stir the orange zest and juice into the sour cream or crème fraîche. Mix in the fennel. Season with salt and pepper to taste. Store in a cool place.

Corn Salad
Mix the ingredients for the corn salad. Refrigerate.

Sandwich
Cut the baguettes lengthwise. Place a lettuce leaf, the fennel salad, and the salmon slices inside. Top with the corn salad. Garnish with either fennel or dill sprigs. Serve!

Sourdough Bread
Sourdough Baguettes (recipe) made withKronJäst Whole-Wheat Sourdough. Finely grate the zest from one lemon and mix it with about 1 tbsp of flaked salt. Brush the rolls with water and sprinkle the lemon-salt mixture over them.
- 4 small sourdough baguettes, flavored with lemon and flaked salt (see above)
- 12 slices of smoked or gravad salmon
- 1 fennel
- 2 dl smetana or crème fraîche
- ½ orange, finely grated zest and juice
- salt and pepper
Corn Salad
- 1 dl corn kernels
- 1 tbsp (13 g) olive oil
- 1 clove of garlic, minced
- ½ dl dill, finely chopped
