
Saffron Buns with White Chocolate and Dried Cranberries

Delightful, Christmassy saffron buns that you can, of course, shape into Lusse buns or other shapes if you’d like. Christmas, Christmas, glorious Christmas!
Here's how:

Crumble the yeast into a bowl or stand mixer, add the cold milk, and stir until the yeast has dissolved.

Place the saffron in a mortar along with the granulated sugar and grind.

Mix the sugar, saffron, and small pieces of butter into the dough liquid along with the flour. Knead the dough until it is smooth and slightly sticky, about 5 minutes.

Flour a baking surface and turn the dough out onto it; roll it out to the right thickness, about 40×40 cm. Cut into squares, about 8×8 cm.

Mix the 4 ingredients for the filling in a bowl. Place a dollop on each square and pinch the dough together to form small bundles.

Place the bundles on two baking sheets lined with parchment paper.

Let it rise under a kitchen towel for about 1 hour.

Preheat the oven to 220 °C (convection oven; approx. 240 °C for a conventional oven).

Press the knots together one last time so they don't come undone while baking.

Brush with egg and sprinkle with granulated sugar.

Bake in the oven for about 11–13 minutes until they are golden brown, fully baked, and still soft.

Let it cool on a wire rack covered with a kitchen towel.

- 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
- 240 g (about 2 dl) milk, cold
- 0.5 g (1 packet) saffron
- 90 g (about 1 dl) granulated sugar
- 200 g butter, at room temperature
- 420 g (about 6–6½ dl) all-purpose flour
Filling
- 50 g butter, at room temperature
- 100 g (about 1 ½ dl) Odense almond paste, coarsely grated
- 80 g (about 1 ½ dl) white chocolate, coarsely grated
- 60 g (about 1 dl) dried cranberries, coarsely chopped
Brushing
- 1 egg, beaten
Garnish
- 35 g (½ dl) granulated sugar
- 2 tbsp powdered sugar
