
Saffron Cookies with Sourdough

Delicious cookies that can be baked well in advance of Christmas. Feel free to try baking cookies in different shapes, both large and small. You can also cut out small “bite-sized pieces” using gingerbread cookie cutters, such as stars and hearts. They’re a lot of fun to make and a hit when served!
Here's how:

Crumble the yeast into a bowl. Heat the milk, or water, to 25 °C, pour it over the yeast, and stir until dissolved. Add the remaining ingredients to the pre-dough, mix, and let stand for 20–30 minutes.

Add the remaining ingredients to the dough and knead vigorously until the dough is shiny and smooth and pulls away from the sides of the bowl—about 4 minutes on low speed and 3 minutes on high speed using a mixer.

Let it rise for about 30 minutes.

Place the dough on a floured surface and shape it into 4 baguettes. Place them on baking sheets lined with parchment paper. Let rise for about 60 minutes.

Preheat the oven to 225 °C.

Brush with beaten egg and top with raisins. Bake in the middle of the oven for 5–7 minutes.

Let the buns cool, then cut them in half or into smaller pieces.

Place the pieces on a baking sheet and bake in the oven at about 150 °C for about 30 minutes, until they are dry and have turned a nice color. Remove the baking sheet from the oven and let the pieces cool on a wire rack.

Pre-dough
- 50 g (1 packet) KronJäst for Sweet Doughs
- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
- 500 g (about 5 dl) milk or water
- 1 g (2 packets) saffron
- 480 g (about 8 dl) all-purpose flour
Other ingredients
- 200 g butter, at room temperature
- 200 g (about 2 dl) granulated sugar
- 6 g (about 2 tsp) ground cardamom
- 9 g (about 1.5 tsp) salt
- 480 g (about 7–8 dl) all-purpose flour
Brushing
- 1 egg, beaten
