    Surprise your guests at brunch with these delicious vitamin-packed treats. It’s fun to bake with spelt, which has a slightly higher protein content and more flavor than regular wheat.

    Here's how:

      Start by rinsing the quinoa in hot water. Bring 2 dl of the water to a boil in a saucepan, add the quinoa, and let it cook, covered, over low heat for about 15 minutes.

      Stir the goji berries into the saucepan once the quinoa is done cooking, and let it sit, covered, for a while so the berries soften a bit. Pour the mixture into a bowl and add water, coconut, flaxseeds, and sunflower seeds.

      Add the yeast once the mixture has cooled to about 25 °C.

      Then add most of the flour and knead the dough for about 15 minutes until it feels smooth, but let it remain slightly sticky.

      Let it rise for about 1 hour.

      Pour the dough onto a floured work surface and either divide it into loaves and place them in bread pans, or divide it into 15 small pieces, shape them into “swirls” (like larger buns), and arrange them on a greased baking sheet. Let rise for about 40 minutes.

      Spray or brush the bread with water and sprinkle with sunflower seeds and, if desired, spelt flakes.

      Bake the loaves at 220 °C for about 30 minutes. (If you’re making small rolls instead, with about 100 g of dough each, bake them for about 10 minutes.)

    • 25 g (1/2 packet) KronJäst for Bread, fresh
    • 150 g (1–1.5 dl) light quinoa 
    • 600 g (6 dl) water
    • 20 g (3.5 tsp) salt
    • 35 g (1/2 dl) flaxseeds
    • 17 g (1/2 dl) coconut
    • 100–150 g (1–2 dl) goji berries
    • 75 g (1 dl) sunflower seeds, toasted
    • 1,150 g (about 19 dl) spelt flour

    Garnish

    • sunflower seeds
    • possibly spelt flakes
