    Here's how:

      Day 1

      Bring water to a boil and pour it over the chopped rye. Cover with plastic wrap and let it sit at room temperature until the next day.

      Day 2

      Add the yeast dissolved in water (25 °C) and the remaining ingredients, except for the raisins. Mix until you have a smooth dough. Then add the raisins and let the dough rise in the bowl, covered with plastic wrap, for about 45 minutes.

      Divide the dough and shape it into loaves or small rolls; brush with water and coat with coarse rye flour. Place the loaves in a baking pan or the small rolls on a baking sheet lined with parchment paper. Let rise for about 60 minutes under plastic (not plastic wrap).

      Preheat the oven to 250 °C. At the same time, place a pan with 0.5 L of water on the bottom shelf of the oven.

      Place the baking sheet in the oven and lower the temperature to 200°C if you're baking a loaf of bread, or to 220°C if you're baking rolls.
      Bake the loaves for about 35–40 minutes, or the rolls for about 15 minutes. Let them cool on a wire rack.

    Day 1 – Blanching

    • 250 g (2.5 dl) water
    • 135 g (2.25 dl) chopped rye/crushed rye

    Day 2

    • 50 g (1 packet) KronJäst Organic
    • 250 g (2.5 dl) water
    • 660 g (11 dl) all-purpose flour
    • 150 g (about 2.5 dl) rye flour, coarse 
    • 70 g (3.5 tbsp) brown syrup
    • 25 g (2 tbsp) cooking oil
    • 15 g (2.5 tsp) salt
    • 200 g (3 dl) raisins
    • 5 g (1.5 tsp) bread seasoning
