
Northern Swedish platter with whitefish roe and smoked reindeer meat

The sandwich on the left in the picture. Luxurious little canapés that taste heavenly. Swedish ingredients at their best. Yum!
Here's how:

Trim the edges of the bread and cut the slices into whatever shape you like—triangles, squares, or circles using a glass.

Mix together the crème fraîche, smelt roe, and finely chopped chives. Season to taste with salt and pepper.

Spread a little butter on the slices of bread. Place a little lettuce on the bottom before adding the meat. Put a large dollop of bleak roe spread in the middle of the meat and top with more bleak roe and a little chives.

Sourdough Bread
Sourdough bread baked with KronJäst Sourdough Whole Wheat Flour (recipe), baked in a loaf pan.
- 4 slices of sourdough bread (see above)
- 1 dl crème fraîche
- 100 g of bleak roe or other roe
- ½ dl chives, finely chopped
- salt and pepper
- butter
- about 200 g of smoked reindeer, moose, or other game meat
- mixed green salad, your choice
