
No-Knead Wheat Rolls with Seeds

No-knead wheat rolls are something anyone can make. You don’t need a stand mixer, and you don’t have to use your own strength to knead the dough. These rolls practically make themselves with a long rising time. Top them with your favorite seeds, such as sesame, chia, or poppy seeds. They’re also perfect for freezing and taking out to thaw as needed.
If you'd like to make 12 buns, simply halve the ingredients.
Here's how:

Place the wheat flour, salt, and dry yeast in a mixing bowl.

Mix lukewarm water, honey, and oil. Combine the liquid with the dry ingredients and stir with a spoon. The dough will be quite loose.

Cover the dough with plastic wrap and let it rise at room temperature for a few hours. Then place the dough in the refrigerator until the next day. (It can be stored in the refrigerator for 2–3 days.)

Remove the dough from the refrigerator and place it on a clean kitchen counter. Divide the dough into 24 equal pieces and shape them into rolls. Place the dough on a baking sheet lined with parchment paper or in a large baking dish (but don’t forget that the rolls will rise during proofing and baking in the next step).

Cover and let the buns rise for about 60–90 minutes, or until they have doubled in size. Meanwhile, preheat the oven to 200 °C using standard top and bottom heat. Brush with beaten egg and sprinkle with chia, sesame, or poppy seeds before placing them in the oven. Bake in the middle of the oven for about 25–30 minutes.

- 9 g (about 3 tsp) KronJäst for Bread, dry
- 1,200 g (about 20 dl) all-purpose flour
- 12 g (2 tsp) salt
- 1,000 g (10 dl) cold water
- 40 g (½ dl) olive oil
- 48 g (4 tbsp) honey or light syrup
Topping
- your favorite seeds, such as chia, sesame, or poppy seeds
Brushing
- 100 g (2) eggs, beaten
