A festive fruit and nut bread with walnuts, hazelnuts, dried apricots, and cranberries. An unbeatably delicious bread that you can easily bake for your Christmas breakfast!
Here's how:
-
1
Preheat the oven to 225 degrees Celsius with both top and bottom heat.
-
2
Coarsely chop the walnuts, apricots, and hazelnuts. Mix the apricots, cranberries, and chopped nuts. Stir in the flours.
-
3
Heat water in a saucepan until it is lukewarm (37 degrees). Crumble the yeast into a bowl, pour the water over it, and stir in the salt.
-
4
Add the yeast mixture to the flour mixture and knead into a smooth dough for about 5 minutes. Let rise, covered with a kitchen towel, for 40 minutes.
-
5
Turn the sticky dough out onto a well-floured work surface and fold it toward the center a few times. Shape the dough into a loaf and place it on a baking sheet lined with parchment paper.
-
6
Bake in the center of the oven for about 30 minutes, until the bread has a dark, crispy crust.
-
7
Let it cool on a wire rack.
