
Halloween Buns with a Surprise

Surprise everyone this Halloween with these delicious treats! Choose your favorite filling—we went with vanilla cream, but you could just as easily choose a tasty jam or almond filling.
Here's how:

Dissolve the yeast in the milk and water.

Combine all the ingredients in a stand mixer. Knead the dough for 2 minutes on low speed and 8 minutes on high speed. Double the time if you're kneading by hand.

Let the dough rest for 30 minutes, covered with a kitchen towel or plastic wrap, at room temperature.

Divide the dough into small pieces, about 50 g each, and shape them into balls.

Place the buns in molds on a baking sheet.

Let it rise under a kitchen towel or plastic wrap at room temperature for about 90–120 minutes.

Preheat the oven to 225 °C.

Pipe the filling into the fully risen bun from the top using a piping bag.

Place the buns in the oven and bake for about 8–10 minutes. (You don't need to brush the buns with anything before baking them.)

Make the frosting and prepare the decorations while the buns are cooling on a wire rack. Combine all the ingredients for the frosting and whip until smooth and fluffy. Pour the coconut into a plastic bag, add food coloring, and mix well. Shape figures as desired using marzipan or sugar paste.

Spread the topping over the cooled bun, then dip the bun in the colored coconut. Decorate with figures.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 200 g (about 2 dl) water, about 25°C
- 300 g (about 3 dl) milk, about 25°C
- 1,150 g (about 19 dl) all-purpose flour
- 200 g (about 2 dl) granulated sugar
- 200 g butter
- 10 g (about 1.5 tsp) salt
- 10 g (about 10 g) cardamom, ground
Filling
- vanilla custard or jam, as desired
Topping
- 150 g (about 2 dl) butter, melted
- 150 g (about 2.5 dl) powdered sugar
- 150 g Philadelphia cream cheese
- ½ tablespoon lemon juice
Garnish
- 400 g (2 bags) shredded coconut colored with black food coloring
- marzipan or sugar paste figures from Odense
