    Gorgonzola tastes the best, but other blue cheeses like Roquefort or Danablu also pair nicely with walnut bread!

      Homemade Pear Jam with Ginger

      Peel and core the pears. Cut them into small cubes. Grate the lemon zest and squeeze out the juice. Peel and grate the fresh ginger. Finely chop the candied ginger. Combine all the ingredients and bring to a boil. Then simmer the marmalade according to the instructions on the sugar package, about 30 minutes. Pour the marmalade into clean jars with lids and store in the refrigerator.

      Slice the bread. Spread a little butter on the bread, then add a couple of lettuce leaves—preferably bitter red leaf lettuce. Top with plenty of cheese and drizzle a little walnut oil over this delicious creation. Finish with a generous dollop of the homemade pear and ginger marmalade.

    Ingredients

    Sandwich 

    Sourdough Bread (recipe) bakedwith KronJäst Rye Sourdough, baked in a loaf pan.

    Mix 2–3 teaspoons of cumin and 2 dl of coarsely chopped walnuts into the dough liquid. Generously grease a rectangular pan with butter and sprinkle the pan with an additional 1 dl of finely chopped walnuts.

    • 4 slices of rye sourdough bread with walnuts and caraway seeds (see above)
    • butter
    • 8 large pieces of Gorgonzola
    • lettuce leaves, preferably red leaf lettuce
    • walnut oil

    Homemade Pear Jam with Ginger

    • 1 kg ripe pears
    • 1 lemon
    • 1 tablespoon fresh ginger, finely grated
    • 100 g candied ginger
    • 1 kg of jam sugar
