
French baguette with ham and Appenzeller cheese

The well-known saying “less is more” really applies here. This is what an authentic Parisian cheese and ham baguette looks like. First, spread a thin layer of strong mustard—preferably Dijon mustard—then add slices of your choice of cheese. Here we’ve chosen Appenzeller, but you can pick your own favorite. The ham can be wine-poached, but smoked or dried ham works well, too.

Cut the baguettes in half. Spread a layer of mayonnaise mixed with Dijon mustard on each half. Top with cheese and ham. Garnish with bell peppers. Serve!
Ingredients
- 4 Sourdough Baguettes (Recipe)
- 1 tbsp Dijon mustard
- 200 g cooked ham, thinly sliced
- 200 Appenzeller, Brie, or Camembert
- 8 bell pepper rings, optional
- 1 dl mayonnaise
If you want to make your own mayonnaise
Mix 2 egg yolks with 1 tablespoon of Dijon mustard in a bowl. Gradually whisk in 1–2 dl of neutral-tasting oil (such as corn or canola oil), a few drops at a time, or use an immersion blender. Season with salt to taste.
