
Ethiopian Honey Bread

A delicious Ethiopian bread with a rich flavor of various spices.
Here's how:

Dissolve the yeast in the water and let it sit for about 5 minutes. Mix together the eggs, honey, cilantro, cinnamon, cloves, and salt in another mixing bowl.

Add the yeast mixture to the spice mixture and stir to combine. Add the butter and milk. Add the flour and mix until you have a smooth dough. Then cover the dough with plastic wrap and let it rise for 1 hour.

Preheat the oven to 250 °C and place a pan with 0.5 L of water on the bottom rack of the oven.

Knead the dough and shape it into two loaves. Place the loaves on a baking sheet lined with parchment paper and sprinkle a little flour over them. Make a few light cuts in the loaves, place them in the oven, and lower the temperature to 190 °C.

Bake the loaves for about 45 minutes at 190 °C. Leave the pan of water in the oven while the bread is baking.

- 50 g (1 packet) KronJäst for Bread, fresh
- 100 g (1 dl) water, lukewarm
- 250 g (2.5 dl) milk, lukewarm
- 780 g (about 13 dl) all-purpose flour + a little extra for dusting the loaves
- 50 g (1) egg
- 90 g (0.7 dl) honey
- 50 g (0.5 dl) unsalted butter
- 9 g (3 tsp) ground coriander
- 18 g (3 tsp) sea salt
- 1.5 g (0.5 tsp) ground cinnamon
- 1.5 g (0.5 tsp) ground cloves
