Cold-fermented rolls made with soy milk.
This is a recipe from one of our readers and was not created or tested by KronJäst.
Here's how:
-
1
Dissolve the yeast in 20 °C water, then add the salt and syrup.
-
2
Add the soy milk and flour. Then knead into a smooth dough. Cover the bowl with a cloth and place it in the refrigerator; let it rest overnight.
-
3
Take the dough out in the morning. Roll the dough out into a rectangle, then flatten the rectangle very lightly on a floured work surface. Cut the rectangle into 8–10 squares.
-
4
Place the squares on a baking sheet lined with parchment paper, brush them with a little water, and sprinkle a little flour over them. Place the baking sheet in the oven at 225 °C for about 10–15 minutes.
